When you turn on The Straits track in Sapphire Strait South of Sheboygan, Wisconsin, you pass a counter on the back of the club where free food is served in the form of grilled hot dogs. It’s an appropriate offer. After all, Germans made up the largest group of immigrant settlers in Wisconsin during the 19th century, and bratwurst is to Germany what kielbasa is to Poland, chorizo to Spain, and Andouille to France. This means that they are all pork sausages – each simply has a different flavour.
With grilling season fast approaching, hot dogs will soon be on your mind, so we sat down with Zick Fitzgerald, chef at Whistling Straits, to get the lowdown on what to look for in a sausage, how to cook it best, and what ingredients make for the most authentic preparation.
Better buy naughty
Not surprisingly, the stellar enfant is all about what you can’t really see. It’s like that old adage about judging people – it’s what’s on the inside that counts. “If you’re buying it from a butcher shop, the person at the counter should be able to tell you all about the sausage—the cuts of ham used, the spice blend, freshness, etc. But if you’re buying from a store,” Fitzgerald says. Check the label to make sure your sausage isn’t just cheaper, lower-quality meat, and that it isn’t full of fillers and preservatives.”

We’re not here to tell you that there’s a right way, or more specifically, a wrong way to outsmart your sister. If you love mayonnaise, peppers, bananas, and chopped tomatoes, who are we to tell you you’re not doing it right? However, according to Fitzgerald, the traditional German-style toppings start with a buttered hard roll and include brown mustard, sauerkraut, onions (cooked or raw), and sometimes pickles.
